Have you ever felt defeated?

It’s been 8 years since my diagnosis with celiac disease. I wanted to jump on here real quick and discuss the emotional aspect of being diagnosed. When I was first diagnosed, I felt lost, confused and scared. I was lost because I had never even heard of celiac disease. Just the word disease was frightening.

My GI specialist told me that my intestinal lining was completely flat. He spoke of the possibility of intestinal cancer if my diet did not change immediately. Where would I begin? I knew nothing about celiac disease. Over time I learned that even though I could change everything to make my body healthy again and absorb nutrients, there would be no cure aside of following a strict gluten free diet.

So what exactly am I getting at? Well, to put it directly, having celiac disease in adults can come with many symptoms. Now, not all men and women diagnosed with celiac disease can get these symptoms. I had many symptoms ranging from fatigue and anemia to depression and severe anxiety.

I’m going to be real for a second. I struggled hard with this diagnosis. It affected my mental health. I felt defeated. Here is what I want you to know! Whether you are just newly diagnosed with celiac or something else of that matter, you are NOT alone. You may seem clueless, scared and have so many different emotions as I had but there is so much support out there.

Not one person in my family or my husband’s family had heard about it so at first it was very difficult for anyone to understand what I was about to go through. Some family and friends thought it was just an allergy and not a autoimmune disorder. Some thought that I was over exaggerating. They just didn’t understand and really needed to be educated, as did I. Then out of nowhere, I started receiving anonymous cookbooks day after day about eating gluten free. I would come home and have a new package. I never did find out who sent me all of them but I knew that there was an abundance of support.

Please know that you can find support groups with those struggling with celiac disease as well as other people out there on social media.

Also if you feel like you would like to reach out to myself, please feel free to do so. Most of us with celiac have been or are in the same boat. We live, but we learn and we support each other!

Cast Iron Gluten Free Chicken Parm

Meal for 2 adults

Ingredients:

2-3 boneless chicken breast
4C seasoning crumbs – gluten free
1 egg
Gluten free pasta sauce
Shredded Mozzarella cheese
Evoo

Prepare the cast iron skillet with a little bit of oil. I use extra virgin olive oil but feel free to use coconut oil or grapeseed oil. I use about a teaspoon of oil to grease the skillet.

Preheat the oven to 350 degrees and heat the skillet for 10 minutes.

While the skillet is heating up in the oven, take each chicken breast dunk in the egg and then in the gluten free 4C seasoning and crumbs. This seasoning was found at my local Wegmans.

Once the skillet is preheated, place each chicken breast in the pan and sear each side for about 6 minutes to get it nice and crispy.

Place the skillet back in the oven at 350 degrees for 35 minutes. Make sure to keep track of the time. The last ten minutes left on the timer add the sauce to the skillet and the mozzarella.

Additional options: adding fresh basil and parsley

I know this is a really simple meal, and most people already know how to make chicken parmesan, but I really wanted to share this recipe anyway especially for newcomers. I just love using the cast iron skillet. It adds so much more flavor to the dish.

Caulipower Pizza

Last night for dinner I took a different approach. I am so very tired of always trying to accommodate everyone in the house especially when I am the only one who is eating gluten free. My kids love pizza but one picky eater does not like veggies! I sprung for the Caulipower Margherita pizza!

This product is certified gluten free. I loved the entire pizza as did my husband and two of my children. The picky eater well lets just say he wasn’t a fan of tomato bits and spinach that he found on the slices. I loved the flavor of the pizza and found out it comes in 5 other varieties. This was also a thin crust pizza, but what I loved most of all was that the crust didn’t just crumble and fall apart! The instructions said to cook the pizza between 13 and 15 minutes. I would suggest not cooking it over 12 minutes!

Cons: This isn’t too much of a con but the pizza was quite small for a family of 5. I should of cooked two of them. I would love to see a bigger size pizza.

All in all I give this product a 9/10

Katz Cupcakes

Our local Market 32 freezer section had these Katz cupcakes. I was very hesitant at first to purchase the package because I am not a huge Katz brand fan. I found their doughnuts to be too dry for my liking. These cupcakes though! WOW!

First of all if you have ever had a hostess cupcake back in the day prior to celiac disease, then you’ll know that this will taste so close to that! When I took the first bite all those memories came flooding back! No lie! This taste just like a hostess cupcake with the cream filling on the inside.

So let’s get down to it! These cupcakes are not only gluten free, but dairy, soy and nut free! They are certified gluten free as labeled on the box. This package contains 4 individually wrapped, frozen cupcakes. This product does contain eggs and corn. You can either heat the cupcake in the microwave for 10 seconds or let thaw for 2 hours. I prefer the thawing for 2 hours.

Katz products are made in a fully dedicated facility away from gluten containing products. Their facility is also certified nut and dairy free! All their products including this one is kosher as well!

I have to say, I gave these cupcakes to my kids and husband after dinner and they all agreed it did not taste like a gluten free product! We all loved that it didn’t crumble apart as we ate it! It is both adult and more importantly KID APPROVED!

I would give this product a 9/10 and look forward to trying more products by Katz!

Gluten free Veggie soup

So this soup is one of my favorites to have when it is cold out and I think it really helps with bloating as well for those of us with celiac disease. I’ve seen similar posts online about various types of veggie soup and I’ve tweaked it all to my own way of liking.

Ingredients:
2 garlic cloves minced
¼ quarter onion diced
Cabbage
Half of zucchini chopped into quarters
1 celery stalk
½ cup of baby carrots
1 orange pepper
1 green bell pepper
About a tablespoon or oregano and basil
1 teaspoon of tomato paste
Organic beef broth (I use the brand Pacific foods)
1 bay leaf
Extra virgin olive oil

Now this can be changed to your liking. I just love to add as much as possible. Other recipes have called for broccoli or green beans and even drained diced tomatoes. I will sometimes add ½ a cup of organic diced tomatoes.

I have a dutch oven I like to use on the stove top.

Over medium heat add about 2 tablespoons of evoo
Then add the minced garlic and chopped onion. Let simmer for a few minutes.

I then like to add the carrots, peppers and celery and stir those until they become a bit softer. Add more evoo if you feel the need. After those veggies simmer for a bit ill add the peppers and zucchini.

I always like to add the cabbage last.
Add in the entire package of beef broth, stir for a few minutes to make sure everything is mixed in. Add a teaspoon of tomato paste and the spices as well as the bay leaf.

I keep this cooking on medium heat for about 20 minutes with the lid almost completely covering the pot.

And there you have it! Thus far my favorite soup recipe!

Fun Facts, Who Knew???

Did you know that wheat/gluten are found in more than just food? When I first had to go on a  gluten free diet, I had absolutely no idea that I had to be fully gluten free! I didn’t know what that meant exactly and as I did further research, I found out that gluten was in so many products that I had been using daily. So, what sort of things contained gluten you might ask?

First of all, it never really dawned on me that my children’s play doh was made with wheat. Ok that I admit was a dumb one, and I should of realized it contained flour, but when you have a few kids running around and asking you to pull out the doh, I didn’t really think that it was harmful for my body…..until a rash started to appear on my hands.

As time went on, I found out that I had to be very careful with everything I was using. I never realized that my shampoo, body washes, facial cleansers, make-up, toothpaste, lotions all contained gluten. I spent a year or so healing my gut from the inside by being on a gluten free diet and yet I still felt like crap!  Whenever I used something on my skin that contained gluten and I was unaware I would break out in this itchy and bubbly rash. This was called dermatitis herpetiformis. I was still using many products that were being absorbed into my skin! From that point on, I sought out products that were certified gluten free! I came across many great products and have found a few that are now my favorites. I will be reviewing those in another post.

Even though I have been gluten free since 2011, I am still finding more and more products that I can’t handle. Did you know if you have celiac you shouldn’t lick envelopes and buy the ones that already have the pre made stick strips? I also didn’t know that my day to day cleaning products contained gluten as well!  What about your daily vitamins or medications you may take if your sick!? I was beyond to surprised that I had to double and triple check all these products and annoy people with my ongoing interrogation! Going to the doctors and dentist with trust certainly wasn’t an easy task. I had to ask them specifically the hygienist to double check their products before they cleaned my teeth.  

It is truly amazing how many things contain gluten. I have recently reached out to multiple companies to inquire about their products. If you have celiac disease here are some of the following questions you should be asking these companies:

 

  1. Is your product certified gluten free?
  2. Is your product at risk for cross contamination while be made, packaged and shipped?
  3. Does you product have its own facility where it is made or do you share a facility with other products that may contain gluten?

 

These are just a few of the questions that should be asked to a company you may not be so positive on.

Dessert Essence

Let’s talk about some products shall we?

A lot of people don’t realize that if you have celiac disease you should also watch what you put on your skin not just what you ingest. Why is that? Well the gluten that is within products, such as lotions, and sunscreen are being absorbed into your skin. Even though you are not ingesting it, you can still have a reaction on your skin.

Once I realized that I needed to change over my skincare products, I went in search of some new products. One brand that I did fall in love with is Desert Essence. This company offers many gluten free products that are reasonably priced and smell AMAZING! They have a variety of options from apple, to coconut, lavender, grape, red raspberry, lemon and fragrance free options! They offer gluten free products for your hair and skin a well as dental products.

I did reach out to the company so that I could confirm a few things. Here is what i found out:

Even though the company has many gluten free products not all of their line is gluten free. They do label every products clearly to determine if it contains gluten or not. They did let me know that some of the products are manufactured in dedicated facilities, but some others are manufactured on dedicated gluten free lines as well. So far so good. I have had no reactions to these products whatsoever.

These products are also free from:
Parabens
Sulfates – SLS/SLES
Phosphates
Phthalates
Artificial Fragrances or Dyes
Silicones
EDTA
Glycols
PEGS, PPG, MEA, DEA or TEA
Petroleum Compounds: Mineral Oil, Petrolatum or Paraffin
Animal Derived Ingredients
Animal Testing

They are cruelty free as well as vegan and gluten free!

I love the colors and packaging of these products as well and they just started offering a travel size package for $10.99 on their site which will include the shampoo, conditioner, lotion and body wash all in the coconut fragrance.

Their shipping is fast as well! It usually takes 2 days to arrive! My only complaint has been when my package has arrived. I am not however blaming the company, but good ole UPS. I have had many packages arrived with squished boxes and once I open it up, I’ll find the body wash all over the place. The company has been more than helpful to replace my damaged products.

I give this company a 9 out of 10 review!

Made Good Soft baked mini chocolate chip cookies!!!

Ok let’s take a quick second to go over these! I recently had ventured out to our local Wegmans and came across these soft baked, mini chocolate chip cookies by the company Made Good! I’m going to be honest, I am a bit judgemental when it comes to choosing food I may or may not enjoy! When I first saw this package I saw that it was free from the top 8 allergens! So what the heck was it actually made with? I am used to eating gluten free but was this something that could really be that good? I mean, I haven’t had a good soft baked cookie in I don’t know how long! Alas I picked up the package, and threw it in my cart and on my way home I went!

That night as I was preparing to sit and finish up a few recent stories, I have been working on all I was craving was chocolate! I grabbed the package and opened up a small pouch of these cookies, popped one in my mouth and couldn’t believe the taste!

“SHUT THE FRONT DOOR” , I had exclaimed to my husband (which he clearly knows meant that I was amazed by whatever it was I was doing!)

This tiny little cookie the size of a quarter tasted like a spoonful of chocolate chip cookie dough! You know the stuff your not supposed to eat out of the bowl but do anyway because you just can’t resist?! I think my world just flipped upside down. It was then when I decided to actually read the ingredients and full on product information!

First of all like I said this is free from the top 8 allergens! No dairy, nuts, wheat/gluten, tree nuts, sesame seeds, shellfish, soy or egg! It also stated on the package that each one of these pouches is 1 serving of vegetables! They are also free from dyes! This product is also certified gluten free, certified vegan, and certified organic and made in a dedicated facility free from these allergens!

As I read on it just kept getting better! The ingredients listed were extracts from carrots, beets, spinach and other vegetables! This was amazing. Where have they been all of my celiac life!?

So this gave me an idea. Now most of you who do not know my family or I personally wouldn’t know we do have other food allergies, such as one of my boys has a severe allergy to shellfish and red dye (possibly other dyes as well…to be tested coming up Monday) That particular son also has sensory processing disorder. So he is the pickiest child when it comes to food and tasting certain things. I literally have the worst time trying to get him to eat anything good! So this afternoon in between church and lunch, I handed each kid a small bite sized cookie and their minds were blown, especially my picky eater! They kept asking for more! So I can certainly tell you this product is KID APPROVED! I can’t wait to send them to school and know that they are getting a serving of vegetables that taste just like cookie dough!

Side note- I did tell them what was in it only because I wanted them to know there are so many other healthier options out there!

I also love their packaging. Each box comes with five small packages just the right portion size!
I am giving this product a 10/10 !!!!

With that I am off to get the kids ready for bed!

A reaction to gluten….

Reactions will almost always vary in anyone who suffers from celiac disease. And i’m pretty sure if you have googled all those reactions, the internet would tell you, that you were dying. I would suggest not over panicking and call your practitioner instead.

I’ve come to know and what to expect my reactions will be over the years. I would like to preface this by saying that I am in no way a medical professional. I am not an expert by any means. I just know my own body and how it will react to gluten/wheat.

Before my diagnosis I would suffer with many symptoms, from headaches to stomach aches. If I have been in contact with gluten/wheat by touch for example I will break out in a rash. If i touch my children’s food that contain gluten without washing my hands right away, my fingers will start to swell like blisters and hurt from the pain. If i have used a body wash, or lotion without fully knowing that it contains gluten, then my body will break out in a rash that looks like little blisters and itch like crazy.  A lot of people actually think it’s pretty crazy to have a reaction if your not ingesting it into your gut, however things that contain gluten that you touch will be absorbed into your skin. My celiac is the type that is so severe, I will have a reaction on the outside of my body.

In terms of ingesting food, what will happen? I have become more sensitive as time goes on. As hard as I try to keep from myself from gluten, things do happen and when they do it is not pretty. If something becomes cross contaminated and/ or I ingest by accident a tiny piece of gluten, then I will get a really bad migraine.  If by chance I have had a meal, that was confirmed when out to eat to be gluten free and was actually not, then I will be sick in a matter of 20 minutes tops. Usually when this happens, my reaction feels like food poisoning.

Reactions can last for days or hours. It all depends on how much gluten you have had. Usually for skin reactions, I choose to take Benadryl. If Ii have ingested gluten by mouth, most times I feel sick for almost 24 hours. I always keep a supply of gluten free crackers in my pantry and ginger tea to help calm down my stomach.

Having these reactions are not fun and most of the time I am pretty good at keeping myself from being glutened. It does happen on occasion though, so try not t be too hard on yourself!

I have been down a long road with trying to keep my reactions at bay as well as avoiding cross contamination. It’s hard. So I explained above how I my body reacts when exposed to gluten via ingestion or by skin contact. Recently however, I had a particular instance while making my mother’s famous sausage bread recipe! It’s a family recipe that I don’t like to share with others, but make it for holidays and other small occasions. Ok back to my story, now I know I should not be touching the dough or the flour, so for that reason I wear thin gloves and still wash my hands afterwards. During the process of rolling and kneading the dough, you have to roll it in flour. It didn’t even occur to me that the flour was airborne! Within 20 minutes of preparing the dough, I became very sick. I couldn’t believe that i’m so sensitive now that I need to wear a mask while working with flour that isn’t gluten free. I know, your probably saying why the hell haven’t you just switched and used all gluten free items!? I totally get it. Being a celiac, we should have an entire gluten free house, but with 4 other people in the household who still eat gluten products, it makes it that much harder to cook completely gluten free. I will say this, I definitely keep all my specific appliances and dishes etc to myself. I have my own row of gluten free food in the pantry on the top level so nothing with gluten is above it as well. I am slowly starting to replace all my cleaning products to gluten free ones!  Just know that if you have just been diagnosed with celiac, this is a long process and takes a while to learn the “celiac” ropes. Stay positive, and work slowly!

Cross Contamination

For anyone who is suffering from celiac disease or even a severe allergy to foods that could cause life threatening issues, going out to eat is no easy task.

When I was first diagnosed with celiac, I am pretty sure I didn’t even attempt to go out to eat the first year. I wanted to cook at home and learn how to heal my gut from my own safe haven. As time went on, my husband and I began to venture back out into the world. Let me just tell you: it’s a scary world!  

I can remember my very first order out was at a place called Wild Willies!. Now this place was actually amazing for those who need something gluten free. (I’ll be doing restaurant reviews at a later time.) I remember ordering a burger and french fries. My husband was told that the fries were cooked in a dedicated fryer and the bun was frozen and thawed in a microwave. For my first outside experience, and even though the bun tasted horrific, the fries and burger itself tasted amazing and thankfully I didn’t end up sick.

So what should you be asking when you decide to go out to eat?

The main thing I have learned is to call ahead of time and ask to speak to a manager. Once we decide as a family where we may want to eat, I will look up the gluten free apps or online to see if they offer any gluten free meals. Once the manager is on the phone, one of my main questions to ask is if the establishment has a dedicated prepping space. If the place can’t guarantee a space to prepare foods separately, or only offer foods that can be made “gluten- sensitive or gluten-friendly” then that place is not really safe to eat.

If an establishment can confirm that they will have separate prepping areas, then I will give the thumbs up to go there. Once we go out to eat, I will ask to speak with a manager and the waiter/waitress and ask if the chefs can change their gloves to prep my food, all the while confirming what I was told over the phone that they do indeed have a separate prepping area. I know, I sound like a lunatic! The problem is, I have gotten sick from eating out way more times than I care to count. Every person who has celiac disease, their symptoms will vary, as well as their reactions.

Another thing, I also like to make sure of, is that the things like fruits, veggies or other items are not stored next to or near items that contain wheat/gluten. There is a huge risk that if fruit is on a shelf right below the breads, then the crumbs could fall on top of it. I know most people who don’t understand celiac disease would just suggest wiping off the crumbs and all will be ok. It is definitely not ok. I will also ask that the food be made or prepared in other bowls and utensils. Did you know that you can still get sick if they cook gluten free pasta in the same pan they just  made wheat pasta in? Like I said in the beginning, going out is no easy task!

What about eating at parties, weddings etc? Ok, this is a whole other topic. First of all I always like to talk to the host ahead of time. For things such as birthday parties or cookouts etc, I will just either eat at home or ask the host if they would feel comfortable having me bring my own food so to avoid cross contamination. (some if not all will offer to make some gluten free items for me, but how to politely say no could take up another post)

When it comes, to weddings, showers or other events that will be at an establishment, I will reach out the person who had sent the invitation and ask them about gluten free options, as well as reaching out to the manager of the venue. One of the hardest things, I have found is dealing with weddings. No one wants to bother the bride with their own issues that deal with food. And why would you? The bride certainly doesn’t need added stress to her plate! In the past, I have always eaten at home ahead of time. This year for example we have about four weddings to attend to. My plan for now is to reach out to the people I am close to and ask them if it would be ok if I could contact the venue to secure a gluten free meal. Another new thing that I will be trying out is the new Nima Sensor that had just arrived a few weeks ago! I will be doing a review about that as well. The Nima Sensor has been said to detect whether or not the food is indeed actually gluten free. This will make it very helpful in the long run, whether it be attending an event or traveling.  

So let’s recap:

 

  1. Call the restaurant and ask if their food can actually be made gluten free, and explain what celiac disease is! ( A lot of people are still so unaware of this disease)
  2. Ask the manager if there is a separate prepping area to make your meal.
  3. Once confirmed, and having arrived at the establishment, ask once again to speak to a manager, waitstaff and or chef. Confirm about the food prep area.
  4. Ask about where items are located and explain about cross contamination.
  5. Ask if they can change their food prep gloves and use clean, and new utensils and pans when cooking your meal.
  6. If you have the Nima Sensor, give it a whirl. If it comes back that it contains gluten, notify your waiter/waitress and alert the chef.

 

I understand that this is all information overload, and I can’t begin to tell you how overwhelming it was for me and sometimes still is. I can tell you that as time goes on and the more you learn, it will get easier!
